Traditional Guilin rice noodles are served mainly in three ways: stir fried, served with meat slow cooked in soy sauce and spices, or with thinly sliced beef and vegetables, which corresponds to the three elements of Guilin culture, namely the heaven, the land, and the people. The five most popular vegetarian side dishes served with Guilin rice noodles are soy beans, young toon leaves, scallions, coriander, and garlic, which correspond to the five elements (Wuxing), while the eight most popular non-vegetarian side dishes are: deep fried pork, slow cooked beef, barbecue pork, slow cooked pig liver, stewed pig intestines, slow cooked pig tongue, slow cooked tripe, and beef aorta, corresponding to the eight trigrams (Bagua).
